Zucchini Chocolate Chip Mini-Muffins
I double these and do in a regular muffin tin (makes about 12). Kind of time-consuming because you have to shred and dry the zucchini, but my two-year old LOVES these!
Cumin-Roasted Carrot Coins
Publix sells pre-cut carrot coins, but they aren’t organic so we usually buy the baby carrots and cut them up. You can even do that ahead of time and blanch and freeze them.
Oven Roasted Broccoli

We usually do carrots, zucchini, onions, and red potatoes.
Roasted Sweet Potatoes
We don’t make the chicken, just the sweet potatoes. The roasted garlic is so good!
Roasted Green Beans
This is the easiest one-we buy the frozen whole green beans at Costco and make these, alot.
I don’t like this one as much as the above recipe, but sometimes it’s nice to change it up.
We do this with chicken thighs mostly, but it’s good with legs too.
Make without the noodles, and double the garlic!
Crock Pot Garlic Chicken Legs
I double the ingredients, add everything (expept for the garlic and broth) to a plastic bag, mix together and freeze. To cook, thaw and add to crock pot with broth and garlic.
My absolute favorite, we cook it in the skillet and freeze, and then thaw and put in a pan and add the cheese.
Use cream or omit evaporated milk, add a few more eggs!
