I have been eating clean, gluten-free, and mostly paleo for the last two months. While I love the way it makes me feel, I don’t love the time it takes away from my husband and 2 year-old son. I have decided to try once a month cooking to save time and still have healthy meals on the table every night for our family. Since I couldn’t find a menu plan that fit our needs, I decided to share this so others may benefit.
